Broccoli Side Dish
My mom and dad hadus over for dinner the other night, and my mom is always known to have healthy side dishes with the main course. She makes me sick really. She’s one of those…healthy types… you know?
Anyhoo… that night she made Garlic Roasted Broccoli. Now I’ve never been a huge “broccoli,” fan… I’ll admit it.
So, being polite, I managed to put a few pieces of this “healthy side dish,” on my plate, and took a “polite bite,” and I was SHOCKED!
My broccoli world was changed forever. I went back for seconds (ok fourths)and I even cleared the pan when I was putting dinner away. This is the most amazing healthy side dish, that I’ve ever had.

How to Make Garlic Roasted Broccoli
Did I mention how easy it is? Yes, totally. Within 25 minutes, (including prep and cook time),I have mygo-to weeknight side dish ready to eat.
Just a small little bowl will do, and you can mix the oil and the seasonings.
I’m all about easy. I buy the already cut, broccoli florets. Heck with that cutting stuff. Then, I put the broccoli in to a ziptop bag, and I pour the olive oil mixture in, and shake it…shake it.
To avoid dirty dishes once again, I cover my cookie sheet with aluminum foil and spray it with a non-stick spray.
Lay all of the broccoli out, to get it ready for it’s suntan.
How Long to Bake and What Temperature:
Bake it at 425 degrees, for 20 minutes (or longer if you like an even crispier broccoli — I sure do).
Straight out of the oven. Mmm…that crunchy little goodness is mouth-watering. Some times I’ll sprinkle a little more salt or parmesan cheese over the top of the broccoli after it comes out for a little more “umph.”

Ingredients
- 12 ounces broccoli florets
- 2 Tablespoons olive oil
- 3 teaspoons garlic powder
- salt to taste; I used 2 teaspoons kosher salt
- black pepper optional
- parmesan cheese optional
Instructions
Preheat oven to 425 degrees F
Place your broccoli in a gallon size ziptop bag
In a small bowl, combine oil, powder, and salt (pepper if using)
Pour liquid mixture over the top of the broccoli
Shake until broccoli is fully covered
Pour broccoli out on to a greased cookie sheet, covered in aluminum foil
Bake for 20 minutes
Remove from oven. Sprinkle with additional salt, parmesan cheese if desired.
Serve immediately
