Keto Sausage Stuffing
Makes: 8 servings
Serving size: 1 cup
Ingredients
- 1 head cauliflower
- 3 tablespoons extra-virgin olive oil, divided
- 1 pound bulk pork sausage
- 1 fennel bulb, coarsely chopped, fronds reserved forgarnish
- 1 cup chopped celery
- 16 oz cremini mushrooms, coarsely chopped
- 4 garlic cloves, minced
- 1 tablespoon finely chopped fresh rosemary
- ½ teaspoon Himalayan pink salt
- ½ teaspoon black pepper
- 3 eggs
- ½ cup whipping cream
Directions
- Preheat oven to 425°F. Coat two large baking sheets and one3-quart baking dish with nonstick cooking spray. Set aside.
- Trim cauliflower and cut into florets. Pulse florets in foodprocessor until they’re the consistency of rice. Divide cauliflowerbetween prepared baking sheets. Drizzle each with 1 tablespoonolive oil, toss to coat, then spread evenly into a single layer.Bake 12 to 15 minutes or until golden brown, stirring halfwaythrough. Reduce oven temperature to 350°F. Cool for 5minutes.
- Meanwhile, in a large skillet cook sausage over medium heat for~8 minutes or until no longer pink. Transfer to large bowland setaside. In same skillet, heat remaining 1 tablespoon olive oil overmedium heat. Add fennel bulb, celery, mushrooms, garlic, sage,rosemary, and salt and pepper. Cook 5 to 7 minutes or until liquidis evaporated and vegetables are golden brown, stirringoccasionally. Transfer mixture to large bowl with sausage.
- In medium bowl, whisk together eggs and cream. Stir incauliflower and mix well. Add mixture to sausage and vegetables,then stir. Pour mixture into prepared baking dish. Bake, uncovered,20 to 25 minutes or until an instant-read thermometer inserted incenter says 160°F. Garnish with chopped fennel fronds.

THE DETAILS:
Breakfast and lunch Monday-Friday, are designed to serve 1 whiledinners and all meals on Saturday and Sunday are designed to servea family of 4. Some recipes make enough leftovers for two nights orlunch the next day. While we truly believe there is no one sizefits all meal plan, we did our best to come up with something thatappeals to a wide range of individuals. Everything is WeightWatchers friendly, I included the updated Weight Watcher FreestylePoints for your convenience, feel free to swap out any recipes youwish or just use this for inspiration!
The grocery list is comprehensive and includes everything youneed to make all meals on the plan. I’ve even included brandrecommendations of products I love and use often. Cross check yourcabinets because many condiments you’ll notice I use often, soyou may already have a lot of them.
And last, but certainly not least, this meal plan is flexibleand realistic. There’splentyof wiggle roomfor co*cktails, healthy snacks, dessert and dinner out. Photo:Fight with Kenni FacebookWhen 2-year-old toddler McKenna “Kenni” Shea started to exhibitsigns of an on-and-off again fever and bloating in her stomach (ontop of classic toddler irritability and picky eating), her parentsMeagan and Michael Xydias were concerned and brought her to thedoctor. Anx-rayrevealed merely that her bowels were full, buther parents,who were convinced it was something beyondconstipation, wanted a more thorough explanationand were sent toChildren’s Healthcare of Atlanta Scottish Rite Hospital for anultrasound. What doctors found stunned them: Little Kenni hadcancerous tumors, which were officially diagnosed as stage 3 yolksac ovarian cancer. “Yolk sac ovarian cancer is a specific type ofcancer of the ovary called a germ cell tumor, and we do sometimessee them in children,” says Stacey Zahler, DO, a pediatrichematologist-oncologist at the Cleveland Clinic. “Germ cell tumorscan form in the brain and reproductive organs of children, andhappens due to cells that have abnormal mutations.” Kenni’s case isparticularly rare. Germ cell tumors only account for about 3percent of all childhood cancers, according to St. Jude Children’sResearch Hospital. And according to the American Cancer Society,ovarian cancer is rare in women younger than 40, with most ovariancancers developing after menopause. (And half of all ovariancancers are found in women 63 years of age or older.) So how didthis happen? Unfortunately, there may not be a specific cause. “Alot of times it is simply a random event,” says Dr. Zahler.“Hereditary factors may also increase your risk of germ celltumors. There are many ongoing research efforts to understandmore.” So far, Kenni has undergone surgery to remove the tumors.Her surgeons removed her right ovary and five inches of her smallintestine. She also started chemotherapy (she is currently on roundone of four). Her doctors are using a lower dose of chemotherapy,which they are hoping will have less on her remaining ovary andfuture fertility. While Kenni’s case is rare, thankfully, herprognosis is positive. “Yolk sac tumors are very treatable and verycurable, especially when found at less than stage 4,” says Dr.Zahler. “I expect her to do well, with at least a 90 percent chanceof cure.” If you’re concerned about this happening to your child,you can look for certain signs and symptoms: “You may notice yourbaby’s belly is getting bigger or has a fullness to it. They mayalso have pain and cramping in the lower abdominal area. A simpleabdominal ultrasound will be able to tell if there is a mass, andif so, then more detailed imaging like a CAT scan or MRI can bedone,” says Dr. Zahler. While therewere only12 of thesestores nationwide, many consumers had expressed excitement aboutthe growth of awallet-friendly optionto combat the store’s“whole paycheck” reputation when Whole Foods made the announcementin 2016. All 12 of the 365 stores are now set to become regularWhole Foods Markets. Every store will remain open during thetransformation process and will not disrupt shoppers’experience,Yahoo! Since the 365 stores werefocused on carrying private-label products, they are smaller thantypical Whole Foods retail locations, and will likely offer fewerservices, such as full-service meat counters. But ifyou’ve ever taken a look at the nutritional information on theback, you might have noticed that many can contain upwards of 20grams of sugar per serving, nearlyas much as a Snickers bar(which, let’s be honest, isa much more delicious way to consumesugar in bar form). And evenif you do find a barthat'srelatively healthy, there’s a pretty good chance thetexture is awful—overly chalky, sticky, chewy, or crumby. Butafter trying pretty much every bar out there, I’ve finally foundThe One. Everyone, meetPrimal Kitchen protein bars. If you followthe keto diet, there’s a good chance you’ve heard of PrimalKitchen. The brand’s healthy pantry staples have developed a cultfollowing—especially among keto dieters—because many of theirproducts fit the high-fat, low-carb eating plan. PrimalKitchen'sgrass-fed collagen barshave been on supermarketshelvesfor some time, and while their nutritional profile isimpressive, I’m personally not a big fan of the texture, which isdefinitely on the chewier side. First, they’re *actually*good for you. All three flavors boastrecognizable ingredientlists and just 2 grams of sugar—the lowest I’ve seen in a bar.The subtle sweetness is thanks to natural sweeteners like honey andorganic monk fruit extract (no sugar alcohols here). My go-topeanut butter flavorhas9 grams of protein from ingredients likecage-free eggs, flaxseed, and nuts, which helps keep me fullbetween meals. They’re gluten-, soy-, grain-, whey-, anddairy-free, as well as paleo- and keto-friendly. In other words,unless you’re a vegan or have nut allergies, you can eat thesebars. The only criticism I have aboutthese bars is that they’re a little on the small side. They’re sodelicious, but in four bites it’s all over and I have to wait untilthe next day to get my fix. But as someone who’s tryingto watch her sugar intake, I’ll happily pay a little extra to getthe convenience of a bar without thesugar crash.
