The Best Jam Shortbread Bars (1)

Jam Shortbread Bars are made by creaming together butter, light brown sugar and vanilla extract and then slowly adding flour to create a crumble texture. This dough will be the base and the topping of this bar and your favorite jam as the filling. I love playing around with different flavor jams and keeping them festive for the season.

Dessert Bars are really great to serve a crowd and easy to whip up for a last minute treat. I love the ease of pressing the batter into a pan, baking and cutting. Ingredients

The Best Jam Shortbread Bars (2)

Butter-Unsalted butter at room temperature will make these bars tender and have the perfect crumble.
Sugar-I love the addition of light brown sugar in these dessert bars. The molasses that is naturally in brown sugar adds an extra boost of flavor and keeps them super moist.
Flour-No need for fancy flour, all purpose flour will work great in this recipe and create the perfect texture.
Jam- There is no right answer here! You choose your favorite Jam for these Jam Shortbread Bars. I love to switch the jam flavors out seasonally but I always love a classic raspberry jam, strawberry or apricot.

Tips and FAQS To Make The Best Dessert Bars

Sugar
Using light brown sugar in this recipe really keeps the dough very tender and soft because of the molasses in the brown sugar!

Dough Texture
The dough will be very crumbly and will not fully come together. This is CORRECT! Once you press the dough into the pan it will come together for the base and will still create the perfect crumb topping

How To Store The Bars
These bars can be enjoyed the day you make them, can be store in an airtight container for 5-6 day or can be frozen for up to three months.

Can I Choose Any Jam?

The flavor of the jam does not matter, just be sure that is a nice and thick consistency and not to watery of a jam.

What is the difference between Jam and Jelly?

Both jam and jelly is made with fruit, the main difference is that a jelly is typically made with a fruit juice and a jam is made with whole fruit and the juice and then mashed.

I halved the recipe. End result was enjoyed by all, but I have questions:
    - batter wasn't crumbly, even after addition of some ground almonds, it 'gelled' into a uniform mass, from which I had to create the top crumbs by hand (should have tried to grate the mass)
    - bottom was tasty, but had a tendency to collapse into crumbs
Any hints for the repeat? Thx.

I doubled this recipe and used a large bar pan. I don't know if it's because I doubled it but I didn't feel there was enough dough for the top and it wasn't crumbly, so I added about 3/4 cup of flour and 1/3 cup of sugar to stretch the amount and make it more crumbly. That worked well. Delicious buttery taste!

I doubled recipe, and time increased by about 15 min. I suggest parbaking the crust 10 min. if you do this next time, as it is not done as it should be, but still very yummy.

      Hi Shellie,

Thank you so much for your feedback! This is a great recipe to double and would definitely need extra baking time and great idea to partake the crust as well for a larger recipe! So happy you enjoyed them:)

What is the mistake in making shortbread? ›

The key with shortbread is not to overhandle it. Make the dough exactly as instructed, but don't mess around making shapes or over rolling the dough - you will end up with delicious but tough biscuits. Stretching and pulling the dough activates the gluten in the flour, making chewy cookies and not crisp ones.

Should butter be cold when making shortbread? ›

Always start with cold butter straight from the refrigerator. This will keep the dough from warming up, making it greasy and difficult to roll out. If the dough does get soft or sticky as you're rolling or cutting it, just put it back in the refrigerator for 10-15 minutes to chill the butter.

Do you have to chill shortbread dough? ›

In the oven, the dough will spread as the butter in the mixture melts, but baking it from chilled helps reduce this effect. It's most important to do this if you are baking the shortbread in individual biscuits. Do you cut shortbread when hot or cold? Both work, it depends what you want to achieve.

Why do you poke holes in shortbread? ›

The holes allow the moisture to escape during baking and more even heat distribution. This helps dry out and crisp up the cookies.

Why do you put shortbread in the fridge before baking? ›

Why do you put shortbread cut-out cookies in the fridge before baking? This is to resolidify the butter. The butter is at room temperature when making the dough resulting in a soft dough. If baked straight away, the butter would melt away immediately when hitting the hot oven and the shortbread would spread.

When making shortbread, what must you not do? ›

Avoid making your shortbread too thick

This is much thicker than a roll-and-slice sugar cookie — or really any other popular type of cookie. If you keep your dough any thicker, you risk the dough coming out of the oven raw. If it's any thinner, the cookie will have a crispy texture with the snap of a graham cracker.

How do you know when your shortbread is done? ›

Bake the shortbread until it's a light golden brown across the top surface and a deeper golden brown around the edges, about 35 minutes. Remove the shortbread from the oven and turn it out of the pans and onto a clean work surface.

Why use cornstarch in shortbread cookies? ›

Cornstarch provides the shortbread with structure, but its biggest job is keeping the cookies extra soft, tender, and light. I love adding a small amount to chocolate chip cookies too. Optional Coarse Sugar Topping: For an optional sparkly crunch on your shortbread wedges, add a sprinkle of coarse sugar before baking.

Can you over mix shortbread? ›

Tip - It's crucial to not over-mix shortbread to avoid it shrinking when baked.

Can you leave shortbread out overnight? ›

Cookies with high moisture content, such as soft and chewy varieties, are more susceptible to spoilage when left out overnight. On the other hand, drier cookies, like biscotti or shortbread, can typically withstand longer periods at room temperature without significant quality deterioration.

Why use unsalted butter in shortbread? ›

Use unsalted butter for balanced flavour. Unsalted butter was traditionally used in baking because it was a superior product to salted - salt is used as a preservative so unsalted butter was thought to be fresher.

What makes shortbread rise? ›

What happens if you don't dock shortbread before you bake it? The water found in butter will turn into steam which will cause the dough to rise. Docking limits the rise by providing air holes through which the developing steam may exit.

How do you know when shortbread is set? ›

A good way to check to see if the shortbread is baked is to see if they are set - they will be slightly firm around the outside, and may be just beginning to turn golden around the edges. You want to keep them nice and pale so make sure your oven is running at the temperature it says that it is.

Does shortbread use the rubbing in method? ›

FOOD PROCESSOR / RUBBING BUTTER: Instead of creaming softened butter, the other method is to rub the butter in. This yields a more crumbly shortbread but the surface is rougher – see comparison photo in post.

How to get shortbread to keep its shape? ›

Make sure you only beat your butter and sugar until it is well combined and starting to change colour rather than really pale and creamy. And once you have cut out or shaped your dough make sure you chill it for at least 30 minutes before baking so that the butter can re-solidify before reaching the heat of the oven.
