If you are trying to eat a little healthier this Avocado Baked Egg Recipe is for you. The thing I love about this recipe is that it will keep you full all the way until lunch! Don’t let the baked avocado scare you. It was delicious!!!

Ingredients
- 2 eggs
- 1 avocado
- ½ lemon squeezed
- sea salt and pepper
Instructions
Preheat the oven to 425°F.
Scoop out the inside of the avocado leaving 1/2" inch rim.
Break the egg into the avocado. Don't worry if the whites spill over, just clean the sides and place on a baking sheet. Sprinkle lemon juice, salt, and pepper over both avocado halves.
Bake for 15 minutes or until the yolks set.
Notes
- Please put some foil on your cookie sheet for a MUCH easier clean up!

Best way to ruin an avocado!I love avocados, and thought this recipe looked really cool and fun! Takes way longer than 15 minutes to cook and even then the egg wasn't fully cooked. Also, something about the flavor changes in the avocado itself when you bake it. I know it wasn't a rotten avocado because the scooped out parts still taste great. Once it was baked it tasted awful! I'm not one to waste food, but I couldn't finish this. I will never make this again!

This was really good. I was concerned the taste would change it didn't but it was different for me having avocados baked. I ended up putting the egg and avocado mixture on my toast with jalapeño jelly and it was amazing! I will definitely make this again!

I absolutely love this! Saw where someone on Yummly had trouble keeping the cups upright, so I shaved just a tad off the bottoms to make them flat. Worked perfectly. Quick and easy, scrumptious and filling. Works well in toaster oven. Thank you, Six Sisters—you have a new fan!

Half a lemon is too much. It didn't taste good, next time I'd do it without the lemon. Also the egg didn't fit even though I carved the avocado properly, still the egg spilled quite a lot, so part of them got to waste. It did look good when baked, I must say, but next time I'll just eat the eggs and the avocado on their own.

This recipe looked so cute and easy. Unfortunately, the flavor did NOT match the beautiful aesthetic. Something about baking an avocado makes it taste absolutely awful. Ruined two eggs and a perfectly good avocado. :(For a much yummier version make a poached or fried egg and put it inside an uncooked avocado, add some lemon, a drizzle of olive oil, and salt and pepper to taste!
